Tampa Teriyaki Chicken with Watermelon Salsa

Directions

  1. Prepare white rice in a rice cooker or microwave per bag instructions. Set aside.
  2. Meanwhile, cook the chicken per the package directions.
  3. Combine the watermelon, orange, lime juice and zest, agave, cilantro, salt and pepper in a medium bowl to make salsa.
  4. Toss gently until well mixed.
  5. When the thighs are done, place them on a bed of rice and top with the watermelon salsa.
